I am a disabled vet and I have a five year employment gap. I'm currently trying to reenter the job market. It will be a very slow process and I intend to start with low skill jobs, like retail. I have translated certain experiences during this five year gap into relevant job skills to make my application/resume look decent. One thing I struggle with is how to title the 'employer' for this five year period.

I had just been putting "Self" for employer and not describing any sort of 'job title'. But I'm wondering if I should go ahead and put something like "Disabled veteran". It feels sort of dirty to do this because I live in an area where veterans are celebrated and I feel claiming this vet status on an application I'm using an advantage that I shouldn't be using. Plus, it's weird to mention a disability when I have no intent or desire to talk about it with random people.

So, advice?

I recommend reading this recent thread that is addressing gaps in employment and how to address them. You will get a very wide range of ideas.

If the reason for the 5 year gap is because you were "recovering from injuries sustained during military service" then of course you should say exactly that. You're under no obligation at all to reveal the nature of your injuries and, if somebody asks you for details, simply say nicely that you prefer not to discuss it. Good luck!
