I'm taking two online courses to finish my degree which will be completed early July.
This is a silly question...but I'm giving it a shot. For jobs that require Bachelor degrees, on my cover letters, can I mention that my schedule is flexible? Would any companies hire me while I'm finishing my degree since it's online?
I don't know what you are asking. What does being flexible have to do with having a degree? Or are you asking if a company that requires a degree will hire you while you are completing your degree and don't have it in hand at the time of application, or are you asking something else?
I would avoid mentioning that you are taking online courses. When I graduated, the subject of college came up on several of my initial interviews. My degree is from a prestigious local state university but my program included both in-class and online courses. Whenever I told them I also took online courses, the hiring managers always looked at me like I had two heads. Now I know to just be vague and not mention I took online courses at all. I guess there is still some negative undertone whenever you say online, the first thing that comes to their mind is University of Phoenix or something.
What I meant by flexible meaning if the hours were working from 8-5, I would be able to work those hours since I'm not taking classes that requires me to be in a classroom. For example an internship.

I'm taking it from Colorado State University. Thanks for the advice.

Or should I not mention it at all.
Don't mention it at all; all you are doing is confusing the issue.
