I'd be afraid that if I didn't go to the job on Monday, the other two would somehow fall through.. I'm a bit of a pessimist lately!

Start the job tomorrow. Don't take the chance. The employment Gods are a fickle group and will make an example of you if you don't go tomorrow.

You can also ask any of these other jobs, possible ones, especially if they can call you on Sundays, to schedule an interview after your working hours. Under the circumstances, ask them to start working with you. Keep whats real, don't throw away a bird in the hand.

They are testing you. Go to work tomorrow. It's better to quit early in person than to not show up at all....even if it's a week into starting the new job.

I can't go because the 3rd interview is on Tuesday at 1pm and already told them I'm not working.

Did you notify EDD that you were offered a position? If not, how would they know?

No, it is better not to go, then to go and quit! Why? Because when they pay you, they will report you to U.C. and your days of getting U.C. will be serverly numbered, in case you make the wrong decisoin. Even if you work only 30 minutes!

You will be cut off Pronto!! and will have a month of arguing with them appealing their decision!!

Don't debate, with me, I know this from experience...
