Why would a Kosher food truck be operating on Shabbat?...
That leads me to a question. The food truck is breaking the Shabbat, but not people who want to eat Kosher and purchase from it on Shabbat? I know you cannot work, but can you buy things?

As far as my education, no you cannot conduct business on Shabbat...
I would not say the majority is against Jews at all, but it's on the rise in many places. IMO, Israel has a lot to do with why.
But, I mean then you just have nutters. That man who killed the people in the synagogue, he said he hated refugees and Jews support refugees. So, ?
Nutters is one thing, you can't predict whom the crazies will hate.
But the anti-minority sentiment is rising in US and the white nationalists here are taking advantage of it. They hated Jews before Israel was a nation, just like their European counterparts did for a few hundred years, culminating in mass murder of innocent Jews.
Israel's policies are a separate (and politically and emotionally loaded) issue. I doubt your average Cletus the Clansman knows or cares about those. He sees a successful minority that doesn't mix freely with the majority, that's enough.
The majority of religious hate crimes in the U.S. are against Jews.

Israel's policies make a lot of people mad and some of them blame all Jews. Which is wrong, but to answer your question in part. That is what Israel has to do with it over here. And for many in Europe.
