Wow, great conversation about the area! I too must spread the love Jab before I can rep ya again. Really nailed the areas.
OP, all I can add/suggest is to make the trip, drive around, meet the people, "feel" the different areas and see which one is right for you. Personally I like JC and Kingsport but live in between the two. But I prefer country living and short drive to more city/activities. If you get to where you are meant to be, you will know it when you see it.

I sure hope there is a Greek, Thai and Indian restaurant in the JC area before I move there in two years... Otherwise, I will be forced to order out! Just kidding. I am somewhat surprised to hear these types of restaurants aren't near the ETSU area... Live and learn...

Probably not quite what you had in mind but there are a couple of little places in Bristol that have some Greek/ Mediterranean.
