This summer I will be visiting Greeneville and will be there for all of June. I was wondering what there was to do or see at night or on the weekends around there for people who are in their 20s. I am also curious about the alcohol laws for Greene County or other easily accessible counties nearby, including ones in North Carolina that are near (if possible).

Thank you!

Drinking wise: unfortunately, Greeneville is not the place. There are a couple bars, but I personally wouldn't recommend them. Instead, I'd spend my free time in the Cherokee National Forest: Paint Creek, Horse Creek, Viking Mountain, etc.

If you will be there all of June & want to go out, I'd recommend Johnson City (30 minutes) or Asheville, NC (1 hour).

Also, I'm not sure if bars are able to serve on Sunday, but I know you can buy beer on Sundays at stores. Not sure on liquor, but I want to say no.

And anyway, if you do go out, the bars are Applebees (probably your best bet for younger crowd @ the bar), Hyperion (I think it is pretty sketchy personally), and the Filling Station (never been there, but heard it is similar to the Hyperion).

Sounds like you want to check out Asheville, NC (Beer City USA) and Johnson City, TN's downtown bar scene.
