I am posting this in vegas cause its vegas that im in.....

i quit my job because my last employer wanted me to work 24-7.

I was hired as an admin and got suckered into doing the company travel and they thought it was ok if people call me at 4 in the morning and at 10pm on Saturday. (that happened more then once) or if i work all week and then work an extra 30 hours on the weekend building them a database. i was constantly abused by the employees and they would wait to the last second to book reservations for flights and hotels (by last min i literally mean they would wait until 5pm (pacific time) to ask me for a hotel that night and then scream at me when i said i can book it as soon as i reach the my house but i had already left the office (at 5) and was on the freeway. (really they would wait till 5:02 pm to call - no joke)

Once a lady forgot to pick up her rental car before the place closed and called me screaming at me because the car rental place closed and because i could not make the car rental place open. (not my company a company we use a lot) and that not only could i not make them open again but even yelled at me because i was eating dinner when she was trying to figure out what to do. and she was yelling enough the whole table could hear when not on speaker phone. (i have a million more examples of why i quit but i think thats enough)

and after putting in 85-90 hours per week they would still pile on additional duties to be done in my (for lack of a better term) "off time"

so i quit.

i have another job already but am trying to fill out the official paperwork how can i professionally word why i quit my job....

Well, I don't know why you would have to put anything on the "official paperwork" of the new employer (it's none of their business, especially if they've already hired you), but if asked, you might just say you were not compatible with the other company's off duty requirements. But I gotta ask ...didn't you try to discuss this with management before you quit?

Yeah i tried to speak with management and they didn't really care... i even went to work one day and I was so sick i could not even talk... and (had even spoken with the boss again that day) and because my job involved so much phone time the next day i could not talk at all so i called in sick... i must have literally gotten 30 phone calls asking why i wasn't at the office and if i was sick and who cares if i am sick cant i book this or that. it was too much drama...

Well its a delicate issue. You can say "work/life balance" and probably get some to understand, but others might think that means you don't want to put in a few hours of OT when demands call for it. Most employers wouldn't want to give you those sorts of hours anyways because they'd have to pay OT wages. Sounds like to me when you get those calls at off hours you should put in for OT and that would get your boss to put an end to it immediately.

When people abuse you it's just a case of giving them their own medicine. If people call you at off hours call them at off hours. When I worked a 3rd shift job people would call me and wake me up with no problem. Well I did the same to them at about 3-4am. They got the message.

In most instances people will only do to you what you allow them to do. When people yell at you on the phone and are asking for your help smile and say your right..Then hang up.. If you did the best you can do to help them there's no reason to feel bad.

As for the new employer try career progression.

Good point. If you were not a salaried employee and they were making you work off the clock, than put that down.
