Viet Bistro on Lake Mead at Rock Springs (near U.S. 95). Met the owner today. His name is Kevin, and yes he's Vietnamese. I'm doing low salt these days and he said he'd make anything I want low salt. Nice guy. Talked our ear off and made us feel welcome. Been there about four times now, and we'll go often. I never saw a fat Vietnamese person so it must be healthy. It's our favorite Asian food. I think they learned to cook from the French.

Everytime I drive by their second branch in Spring Valley it's busy. Only been open a few months. Gotta try it one of these days, I just don't like sweet meat though.

I guess that depends on your definition of a few months. The SW location opened in the fall of 2010. In any case, I agree with everyone else that it is much better than Dave's.
