Red Velvet is at least vegetarian and perhaps a vegan restaurant. It is one of the best of its kind. Rainbow's End is another good one. Two more are: Pura Vida and Go Raw Cafe.

try hedary's or khoury's for falafel hummus baba ghannouj and many other lebanese vegetarian dishes, they are not only vegetarians but they have a lot, in fact call them and find out what all they have, the menu changes, in fact if you let them know in advance they can have more variety, speak to frank my brother at hedary's or mariz my sister at khoury's, they are the owners.

Red Velvet Cafe serves meat as well as offering vegan substitutions for everything on the menu. Every restaurant in the Wynn has vegan menus available. The Strattus (sp?) is fairly reasonable.

Despite the lack of vegetarian restaurants, I have never had a problem eating at anywhere. Because of the generous buffets here, vegetarians and vegans don't go hungry when they visit.
