wondering how the market is coming along in lv for culinary positions? i am looking to move out west and lv is one of the places i am looking into. i have plenty of experience, certifications(servsafe and such), and education(culinary and baking and pastry degee). i have looked on the big casino websites and it shows they are hiring cooks and bakers and so on but just wondering the chances of someone actually landing the positions.

You really will not know until you move out to Las Vegas and start looking.

And do remember that the Strip is just a portion of the culinary positions in the city.

yeah i have figured that out i looked at some other very well known restaurants there. one more question is the union in every hotel/casino or is it just some?

The union is basically in all the strip casinos. The reason I say "basically" is because there are non-union restaurants inside the casinos -- Gordon Ramsay Steak and Bouchon spring to mind.

Getting in at any of these places is the same -- 1) Be considered one of the top people in your field and apply directly for the restaurant you want. 2) Start as a steady extra cook's helper in a casino and work your way up.

If you have the skills and experience, #1 is easier. If you have the skills but not the stellar resume, #2 still isn't all that hard. I went from steady extra cook's helper to the fine dining kitchen that I wanted in less than a year.

Attitude is everything. If you work like you don't care about money and are just in it for the joy of it, you'll move up fast.

EDIT -- But you have to pass the background check, and getting a foot in the door is harder for recent transplants. Nobody thinks you'll last through one summer here.

my resume is pretty solid, i am currently an exec pastry chef here in chrlotte, worked at a couple big places in charleston sc, and like i said have certs, education, and competition medals. i will take any position i can. also does having a friend who is employed in a casino help? also background check is no prob, and im originally from florida so i am used to heat but i know lv is a totally different level

I have talked to a lot of people (people not on this board) and you are the only person I have talked to so far that says this.

also money doesnt matter to me i want something better than charlotte can offer as far as culinary. i want to be challanged and work around other people that just dont do it for a job.

Default you must first have official state of nevada health, Tam and or sheriff's cards

Hello, the state of Nevada requires you to have either health, tam (covers serving food, alcohol and beverages) and sheriff's. Cards. But first you have to show a letter of intent to hire, then we can direct you on where to go.

so servsafe does not cover that? how would i get one of those certs?

Servsafe will get you out of the required health video movie. But you still have to pay for the card and the hepatitis shot.

And all you need is the health card. TAM is for front of the house. And the sheriff's card is for dealers and similar. You only need the health card to show up for work. You can be hired without one. So you can apply online and see if you get in anywhere, then get the card if necessary.
