Dont know about the noodles, but definitely check out Village Meat and Wine. Cant recommend them enough!

There are two hole-in-the-wall Asian retail shops selling fresh pasta in the Spring Mountain area. Both sell soba noodles, which is whole wheat and buckwheat. I don't know the names of the stores -- just their location, behind International Marketplace. Next time I'm in the area, I'll make a stop.

For organic meat, there's Bar-10 Beef from the vegasfoodcoop.com, Buddhist chickens at the Asian markets, Halal beef and lamb on Spring Mountain, Mexican chickens at the Mexican markets (not certified organic, but certainly up to your standards) and Village Meat and Deli.

Why not just make your own pasta? Get a $90 hand-cranked pasta machine and one of Mario Batali's books.
