For convenience & privacy reasons, I tend to use a Post Office box instead of receiving mail at my house.

In California, I could actually have my PO Box on my CA Drivers license & auto registration too -- kind of surprising, but a good thing. Had to use my physical address for such things here in Utah! but now that I'm planning in moving to the LV area soon, I'm just wondering if anyone knows one-way or the other if I can legally use a PO Box address for such state-issued documents?

Get a box at a place that provides a real address, most third parties do that. Bear in mind that your privacy is only safe from casual inquiry unless you go gray market.

I use a rented mailbox (e.g. Mailboxes Etc) for most things. That's the address that's on my D/L and car registrations, although the DMV does know my residential address.

I used that because I didn't want anyone that stole my wallet or car to have my home address. Naturally, my CCW has my home address on it, because they won't use a mailing address!
