What about companies, or jobs that hire videographers, cameramen? Any residents know of weddings, TV, News, Reality TV, crews on strip or court reporting videographers, school video production, production in general?

Yes, all of the above. There are at least nine local TV stations, several production houses (a couple owned by friends I worked with in television), tons of ad agencies, 19.000 conventions a year and nearly all 19,000using video screens, etc. You might be able to freelance, or you might have to join IATSE. Probably the wedding chapels use a staff member to shoot poor quality video to sell to the happy couples though. When Hollyweird comes to town, which is quite often, they might hire locals, or they might bring a crew. It's one of those occupations where you have to go door to door, and show off samples of your work ...if you can hold their attention for that long. You might be unhappily surprised to see what they pay though. Hint: not a lot.

I am in corporate a/v (producing some of those 19,000 conferences). Most of the venues do not have staff videographers, but will hire an outside person. And, yes, the IATSE union has a huge presense in LV with only a handful of the larger casinos not requiring union labor for a/v. I would definitely recommend contacting the a/v departments at every hotel & casino and letting them know you're available to operate a camera. It will probably be only for iMag, but if you don't mind the boredom, it can be a good gig. I pay my cameramen $300-$450/day on average. DM me your info and I will keep it on file for when we next need a cameraman in LV. I produce events all over the country, and only do a handful in LV due to the heavy union presence, but it's always good to have another tech in the portfolio.
