Ok, I wasn't imagining I saw this. This was taken today at the Smith's at Hualapai and Sahara. They have rearranged the meat counter somewhat. It used to have a flat area where they would stand the USDA Prime steaks on end and arrange them in a circle, sort of in the shape of a crown pork roast.

Beware of mechanically tenderized meats! That stuff is not good for you, unless you plan on cooking your meat to 160 degrees (well done) internally.

That's just wrong.

That isn't USDA prime. USDA prime has a symbol that looks like this, and ONLY like this:

That beef you linked is ANGUS BEEF, but not prime. If it was really prime it would say so on the shield. It's got "prime beef" in the marketing crapola, and USDA Angus in the "official report." You can tell just by looking at it that it isn't USDA Prime -- not enough intramuscular fat. Furthermore, "Angus" is not a grade of beef, it's a breed of cow. The USDA doesn't guarantee breed purity. They only grade. That symbol at Smith's is not an official USDA symbol.

That's one hair's breadth away from fraud. If I saw that at a store, I'd be calling for the store manager. That is as sleazy as I have ever seen at any grocery store ever.

That post literally churns my stomach. Markets should not get away with that. This is one step away from Upton Sinclair territory.

I. Am. Appalled.

I had considered that possibility, as I did notice that's not what the USDA grading shield looks like. But because the item above it was labeled "Choice", and had less marbling, I assumed a big chain like Kroger would not be guilty of such such deceptive practices and gave them the benefit of the doubt.

If the item labeled "USDA" and "Prime" is really not "USDA Prime" but more likely "USDA Choice", then I guess the item labeled "USDA" and "Choice" is likely "USDA Select" grade. That would explain why their meat prices appear to be competitive with Costco when in the past they have not been. That's a more plausible explanation than they decided to accept a lower markup or got a better deal from their supplier.

Prime accounts for around 3% of US production. There are never any specials on the stuff, because there's so little of it. That's like running a sale on vintage champagne. It simply never happens.

Supermarkets have been pulling this sort of nonsense for years, treating their customers like uneducated rubes. (And I'm guessing because most of the time, that works.) All of this crap about "Rancher's Prime, Cowboy's Choice, and Prime Cuts" has actually caught on with the consumer. I hear it and see it all the time "Where are the prime cuts?"

The reason they get away with this is because people don't know any better. Same reason that most of the olive oil sold in this country (this is not hyperbole -- MOST) is either adulterated or outright counterfeit. Since the consumer doesn't know what real olive oil tastes like, they're sold canola oil with added chlorophyll, and charged real olive oil prices for a fraudulent product.

Same thing with beef. People want the best, but they don't know [censored] from Shinola about food.

EDIT: Here is a link from the USDA about how their beef is graded. Notice that there is no "USDA Angus."

USDA Blog » What

And here is a link from a meat market that obviously DOESN'T treat their customers like a herd of ignorant rubes:

How does one report this to the USDA? I'm sure Smith's will get a smack down from the government if they are found guilty.

I like to add to the discussion:

There is no such thing as Kobe beef in America. Why? Because Japan does not allow beef export out of Kobe region, period. Not to any single country.

If a fine dining restaurant offers Kobe beef instead of calling it "American Kobe", it is playing off consumer naiveté.
