Bachi Burger is awesome-good choice.
Sweets Raku in Chinatown is a super cool dessert place- very unique. I've also heard its counterpart Raku is very good as well, but I haven't eaten there.
I love The Bootlegger for old school Vegas charm and good Italian food.
Nacho Daddy is good for lunch.
I also second El Dorado- the location is hilarious to me, but the food is excellent.
If you really want to get the locals experience, you can go to a PT's lol.
Jose Andres Bazaar Meat is supposed to be very good- it's at SLS so technically off strip haha.
Zydeco Po'Boys- downtown on Carson Street.
Barcelona Tapas- Southern Highlands- it has a good all you can eat menu that's a good value. Sangria is also good.

I know you want to stay off strip, but the best meals I've had in Vegas have been at Michael Mina at Bellagio and Table 10 at the Venetian. Also, Fiamma at MGM Grand was excellent, and I love Burger Bar in Mandalay Bay. (That's my favorite burger place, I think, followed by Bachi Burger).

So many good restaurants off the Strip, so little time. Maybe the OP should ask for the type of food they are looking for. Whatever it is there will be one (or 100) here someplace. But we could use more strictly seafood restaurants. I also heard of a "new", New Mexican restaurant. At least it's new to me, called Chile Addiction, on Flamingo and the 215. If you've never had New Mexican food you don't know what you're missing. But, the best restaurants for that in Las Vegas are at Garduño's in the Palms and Fiesta hotels (because the man that built those hotels is from Albuquerque). (Hint: NEW Mexican (the 47th State) food is NOT Mexican (the country); it is a blend of 17th century Spanish, European (including the new world, aka: USA), American Indian, and Mexican.) There is just nothing like it.

Buzz, we eat all kinds of food. So I didn't want to limit the results to only specific things. Many of the places people have suggested sound intriguing! I am keeping a list, so the ones we dont hit this time - I'll get them on a future trip!

Food is fun!

Two of my favorite places to eat in Las Vegas are The Bagel Café and Sweet Tomatoes. I have more but these are at the top of the list.
