I wanna call Vegas the Dining Capital..
I really can't think of a single thing or restaurant I'd
want to eat at that isn't available in Las Vegas.

Totally agree. Ya, and in most cases 5 or 10 world class examples of such a restaurant or food. For a city of it's size Vegas has to be at the top food-wise.

I would agree, but a specific food that Vegas doesn't do well at providing is NY style pizzas and bagels. Other than that, the food in Vegas is comparable to all the big cities.

I would say the Chinese/hot pot scene is not as good as California or NYC.

It's getting there, plus hotpot can be bought and done at your own convenience at home.
