We had a lot of fun walking around the big named hotels. They're super gorgeous inside and just cool to look at.
Not sure what the deal is right now with COVID, but there are TONS of fabulous shows to check out. There are also a number of really big/famous/fancy restaurants; we went to Gordon Ramsey's:

I used to drive a cab in LV...this question always cracked me up and also spoke volumes about the person asking.
FWIW, in Las Vegas you can do anything you can do in any other city...and 1,000 other things you can't in every other city all in ONE city!

In general just pay attention. There are an innumerable set of things to do without gambling though wife and I always gamble $50 or$100 as an offering to the Las Vegas Gods.
Hit downtown too - good fun just to walk around and have a drink or two.
