I'd suggest taking everyone out to Lake Mead for the lake cruise, if it's still offered. The boat ride is neat, the scenery is beautiful and you can catch a decent lunch at the marina. If you want to make a whole day affair of it, it's about a half-hour drive from the marina on around the other way to Hoover Dam. It's interesting to see the new bridge that is being built there. Just before the marina, an interesting sight seeing trip is to drive through as much as you can of Lake Las Vegas and gawk at some of the beautiful homes.

Also you could do a picnic and hike up in Mt. Charleston. The lodge at the top is very nice and it would be much cooler up there in July. If everyone will be in town on a Sunday, try to hit one of the big brunches that are featured most of the day. For years, one of the nicest Sunday ones was the Sterling Brunch at Bally's.

Thanks for the suggestions everyone! I don't think the venue can be changed at this point, particularly as we all live in California, and most of the folks in the LA area didn't want to stay in the state, but not go too far. I'm marking this stuff down for discussion.
