I just moved to Bethlehem. You've got a nice town here. I live in the historic district of town, and the sidewalk bars/restaurants/etc. are great. I want more...

Uh-oh, You already live in the coolest town we have and in the best area. Not sure we have anything better! I assume you've also discovered the South side of Bethlehem over by Lehigh U? Main Street Emmaus is nice, but I don't know if their restaurants have outdoor seating. Lots of people go to here -
Welcome to The Promenade Shops at Saucon Valley which is a faux downtown, but really popular. Hellertown has a nice little downtown, but it's literally two blocks and make Emmaus look hopping.
I hope someone from Easton can chime in. I've been in downtown Easton to the State theater but don't know it well enough to talk about it's restaurants or night life.

I always liked Ripper's pub and The Beef Barron in Bethlehem, and Stahley's on union blvd in Allentown.
