We live in Northwest NJ about 20 minutes from Easton. I'm looking for possible places to take my wife and daughter on Mothers' Day. There are a few nice botanical gardens and arboretums that we've been to here in NJ, but I was wondering if there were any in the Easton/Allentown/Bethlehem area to check out? I think later in the day we might head up to Milford in Pike County for dinner, but I'd like to do something close in the morning that's not such a far drive. Any ideas?

Yes, we visit the Graver Arboretum often. It is located very close to Route 512 north of Bath, PA. After your visit, it would then be super-easy to travel north on 512 and access Route 33 at Wind Gap, then proceed north to Milford for dinner, or you could continue over on 512 and drive up near the river if you'd like something more scenic.

Here is the official website: Muhlenberg College: Graver Arboretum
(There are more clickable links on the right-hand side of that page which explain the history, location, etc.)

For your GPS, even though the Arboretum comes out to Route 512, you park and access the paths via Bushkill Center Road, so use this address: 1581 Bushkill Center Road, Bath, PA 18014

Hope you have a wonderful time!

Grey Towers in Milford is great for a trip (since you're going there anyway). It's nice grounds, but the mansion is the real attraction:
