My son's friends are all turning 16 this year and for the girls a dinner out at a nice place and then a sleep over seems to be the trend. The guys are doing the regular computer/video game playing and staying up all night (groan). I know one girl whose family took her and two friends on a cruise but that's about as overboard as I've heard it. My kids have never wanted anything more elaborate then movies or dinner out for birthdays, so I'm lucky.

Where are you located? I know you can rent out movie theatres (private movie and then party room) . That was a hit for my oldest but he was more like 14. We've also done snowtubing and some of the ski resorts have party packages. Might be worth looking into.
