Dumb question, but does the "Mongolian" part have more to do with the cooking style, or are these places actually owned by Mongolians?
Cooking style. Here's an example bd's Mongolian Grill

Japanese Hibachi and Korean BBQ are more prevalent than Mongolian BBQ. Korean BBQ is closer to Mongolian BBQ. Meat is marinated and cooked rather than doing a stir fry.

Definitely not a WC thing. In and around DC and the NOVA suburbs there are a few of these. One example: Charlie Chiang's Restaurants (DC, Virginia, Florida), From Yelp: Charlie Chiang's Restaurant - Herndon, VA

There was a sign next door to One Third Asian on Linden Street in Bethlehem announcing that a Mongolian BBQ grill was opening soon. Has anyone driven by there or seen if it opened?

That will be a great new addition to the expanding Asian dining on Linden Street.

In addition to the Asian cuisine on Linden Street (route 191) there are two places that have opened on Center street just north of route 22.
Red's Chili Hibachi just opened in the last few weeks. Next to Weiss Supermarket on Crawford Rd (north of Wegman's)
Prince Palace Dumpling House is the best places for Dumplings in the Valley

The Asian onslaught, plus the Subway next door to Weiss Supermarket and the inexpensive meals at Wegman's seems to be displacing the older (and often pricier) restaurants in the area.
Hanoverville Roadhouse is still operating but it is up for sale
Anne Bella's Ristorante is open, but never busy
Golden Diner seems to have closed.
Italian Restaurant "Da Vinci's" formerly in Dumpling House location has closed.
Pizza Village IV by Weiss gets very mixed reviews

Anatolian Kitchen has opened in the mall where the Mongolian Barbecue had a sign. The sign for the BBQ is gone, and a muscle store is opening in it's place

Bummer! I was looking forward to Mongolian Barbecue! I'm not sure I know what a muscle store is, but it doesn't sound nearly as appealing.

The Anatolian Kitchen is a Turkish/Mediterranean restaurant, features Kebabs of various sorts (lamb, beef, kofte, chicken) are all present as well as traditional Turkish beef dumplings. The entrees run from $8-$17 and include rice, lettuce, onion, and tomatoes. They also have falafel, soups (rotating daily special and lentil), salads, hummus, stuffed grape leaves, baba ganoush, fried liver cubes, and fries, among a wide variety of other vegetarian appetizers. For dessert you must have Baklava. They also have your typical Turkish tea and coffee, as well as Ayran, a Turkish yogurt drink.

One third Asian the other dining place seems to be near the top end in price for Asian Cuisine in Bethlehem (except for the casino), although there are also hibachi lunches for $8 to $11.
Highest priced dinner entree is $55.00 Sushi & Sashimi for Two (18pcs sashimi, 10pcs sushi, Rainbow roll, and Dragon roll ) ($23 for half as much for one person)

This explosion in Asian Dining clearly wants to serve more than the 2.6% Asian population of Northampton county. I remember when there was not one single place to get Sushi in Northampton county. I took my mother to Hamilton Street so she could try sushi. It was the worst sushi I had ever had in my life. My mother took it home in a doggy bag and cooked it.

Mongolian Stir Fry now available at most Ryan’s®, HomeTown® Buffet and Old Country Buffet®restaurants

Asian-inspired cuisine is one of the major food trends today, and Ryan’s®, HomeTown® Buffet and Old Country Buffet® are continuing their promise of choice to the guest with fresh, made-to-order stir fry. The company’s restaurants are offering stir fry with the guest’s choice of chicken, beef, shrimp or vegetarian options. Mongolian Stir Fry is available at both lunch and dinner at a majority of the company’s buffet style restaurants, effective immediately.

WHITEHALL, PA 18052

I realize that Old Country Buffet is not what the OP had in mind, but it seems to be what is available.
