There are also three nature preserves on the Kentucky River close together in nearby Nicholasville (forgot about those).

I am glad you mentioned this because I had been meaning to go there for the last 2 years. Shakertown is WELL worth the quick drive out of Lexington as I went recently and will go back for sure. I like Lexington ok but I much prefer its surroundings. Some of the most unspoiled and beautiful land in the USA very honestly.

Check out the Dixie Bell boat ride on the Kentucky River, too. Affordable but excellent guided river boat tour. Maybe the best $10 boat ride in the USA.

Jacobson Park is nice. Raven Run is one of my family's favorites.
Beautiful sanctuary. My husband uses Shillito Park fitness trails quite often...but it is only a couple of miles long.

Well, those are "outdoors," but they're hardly hiking trails. Depends what the OP is looking for...
