I would also consider Rockville Centre. Nice places to eat and drink, you'd be in GC in about 10 minutes, and not far from the city via LIRR. GC itself is nice, but not a lot of bars, etc. Huntington is great, but it's about 30 minutes east...but it's the best downtown on LI (55 min to city).
I'm 26 - I moved here for a job in Garden City as well in the beginning of 2005. The commute was about 30 minutes in the morning (this is with traffic). I paid $1100 a month for a studio across from the ocean. I changed jobs about a year and a half ago and also moved into a 1 bdrm ($1300 w/ utilities). There is a train station in town and you can be in the city in about an hour. Definitely a great place to live in your 20s. There is good nightlife and in the summer you have the beach as well.
I would also look into Rockville Centre. Commute both to Garden City and NYC is easier. Also has nightlife and 20s crowd.
Long Beach is fun, but only during the summer. I've lived in forest hills and it's nice, but the parking was a daily nightmare. If you want something comfortable for your commute and life, a friend of mine is moving out of a pretty cool 1 bedroom apt which is right on the water in Merrick. It's about 10 minutes away from your work and the long island railroad can take you to the city in about 30-40 minutes. Don't know if it's still available, but I can find out if you're interested.
make sure you're near an lirr station. thats a definite need. get connected with the local scenes if youre interested. lots of music and art going on everywhere you look.

However it is a place where a lot of young people like to live.
You can also try looking in Rockville Centre like someone else suggested.
Merrick is a nice neighborhood. Not a lot of stuff to do but most of the Island is like that anyway.
These 2 towns are close enough to Garden City and NYC.
Rents are definitely cheaper in Queens than in Nassau.
