What towns are predominantly Latino?

You wont know by pop stats since many are off the radar but check the Middle first.

There are noticeable presences of Hispanics in many towns across the island but here's where they're the majority;

+ Brentwood [overwhelmingly majority Hispanic]
+ Central Islip [majority Hispanic but very diverse]
+ North Bay Shore [overwhelmingly majority Hispanic]
+ Freeport [almost split evenly between Whites, Blacks and Hispanics but Hispanics are the majority]
+ New Cassel [literally almost split evenly between Blacks and Hispanics but Hispanics are the majority]

(Huntington Station and Copiague have section/s that are majority Hispanic but the towns themselves are not majority Hispanic).

I would like to add that the Hispanic populations in these areas may actually be a lot larger since, as another user mentioned, a lot are "off the radar" and not accounted for in the census.

Those stats are a little off, since they're not the official US census results (of course, like you said, there are probably a lot who didn't fill out a census form, but for all intents and purposes, they don't exist)

Freeport doesn't have a Hispanic majority. Hispanics are a plurality (the largest racial group), but they aren't the majority (50% or more)

Everything else looks alright.

Farmingville, Patchougue, seem to be the worst, there all over. I just hope english stays the dominate language. I only speek english and italian, guess that helps a bit...

There is a strong Hispanic influence in many towns on Long Island, even if they are not the majority.
When you go to Brentwood, CI, north bay shore many of the store signage is in Spanish.
Other areas like Riverhead have a large Hispanic population but it's not as defined.
It's almost impossible to say exactly how many Hispanic people are residing on LI because many are completely undocumented.
