Of the communities you listed non of them fit your criteria, all of them are far too expensive and Freeport is crime-ridden, the only decent part is South Freeport which has a very small Italian population who sends their kids to private schools, due to gang violince in public schools.

In Long Island, Wantagh, Seaford, Massapequa, Franklin Square and Oceanside have large Italian communities and good school districts. Levittown also has an Italian community, you can probably get the most bang for your buck there, but the school district is decent, and it isn't as good as the ones mentioned above.

Default Oyster Bay Estates

Don't know if this is in your price range, but have you looked into Oyster Bay Estates in Oyster Bay Cove/Syosset ? It is in a great school district, with the type of community your looking for, a 45 min train ride into Penn Station.
Check it out, you'll be glad you did.
