just leave as early as possible. it is what it is. also take a look at the map and try to figure out the back road "shortcuts" once you get into Southampton. it will end up taking nearly the same amount of time, but you'll feel better than sitting in that single line of traffic on 27.

If you are going to East Hampton or beyond, it is often better to get off 27 soon after you enter Southampton, and make your way through Sag Harbor, and then take 114 from Sag Harbor to East Hampton.
There are also backroad shortcuts to Bridgehampton, if you get off 27 a little further down before 27 turns left. The roads there are called Head of Pond road and Scuttlehole Road.

Someone should start a thread just for the residents there and title it "What's the best time to leave your driveway to go to the corner just to get gas?"
Leave Thursday. If that's not an option, wait until after 8 PM on Friday. If you have to be there before 10 PM on Friday, leave at 7 AM. I wouldn't travel between 7 AM and 8 PM.
If I understand this correctly, you are flying into JFK with plans to get to the Hamptons. So just get to the Hamptons. It is impossible to leave later and get their earlier. Therefore, just land, get the car, and go. The earlier you get there the better. What else are you going to do, hang out at the airport until such time that you think the traffic lightens ups??
The idea, in general, that you should wait until late at night or some other such time in order to have a quicker and less stressful journey is contingent on the idea that you have something else you could be doing with your time while your departure is delayed.
