I am thinking about moving to one of these towns/villages, ideally to a house that's close to the village/town center but still has some acreage. Which one is the safest? Thanks.

Locust Valley is scary... Buffy and Muffy have been known to CUT PEOPLE DEAD in the street, for even the most minor faux pas.

It’s not the towns per se it’s the school districts. Glen Cove is a loser, the rest in the area are fine.

Considering where in Manhattan you are now, you're definitely Locust Valley material. There are so many pluses, and the cachet of having lived there, will follow you for the rest of your life. If, later, you want to get into one of the good buildings on the Upper East Side, the references you'll have from Locust Valley will be very helpful.
