We'd love to go up to Santa Barbara but the hotel/resorts there are more than we want to spend. We were just in San Diego so we'd rather not go there. We live in the SFV and would like to keep the drive down to 2-3 hours. Any suggestions? Thanks!
Realistically, your budget for what you have in mind is more like $500 a DAY. Have you considered just doing an over nighter somewhere nice?

Palm Springs doesn't have the beach, but it does have some great resorts for good prices if there isn't a tennis tournament or coachella going on.

Ventura is the best beach town in Southern California for low cost fun. The downtown area has great walkable stuff plus the old Mission is really neat! It costs to get in, but it is a good little walk around old California. There is often a small festival or market or classic car show going on down there. It's not out of hand like Huntington or Santa Barbara. There is also a great long walking trail along the beach with easy parking.

We just got back from two nights in Tahoe. Absolutely beautiful, but the 8 hours of driving... ugh! My favorite weekend getaway is an off the strip casino resort in Vegas. There are several to choose from. Quiet, sunshine, giant pool, a small casino I can ignore. That's the ticket for me.

Catalina Island. Crystal clear, calm waters, beautiful scenery. Looks like the Greek Isles.

According to Travelocity, hotels in Avalon (Catalina) are in the $100-150 range. You could explore the town, go hiking in the mountains, hang out at the beach, go snorkeling, do touristy things, eat at nice restaurants, and have the fun boat ride over.

Try staying in Solvang or Buellton and look online for the map for where the movie "Sideways" sites were shot The movie is probably 10 years old but the wineries and the scenery must still be there. The whole Los Olivos area was just perfect, so relaxing. My husband and I had a lot of fun and we ate some great food. Not on the beach but you could drive there.
