Does anyone know of good bread baking supply stores in the LA/Ventura County area? Moved down from Northern CA recently, and discovered the grocery stores (in Agoura Hills) don't carry much--e.g., can't find wheat gluten anywhere.
My dream store would carry specialty flours, etc.
I suppose since it cannot be done in a car, people is LA don't ever bake bread...

yes, definitely check surfas. the store is in culver city, if you feel like making the drive. their cafe has great sandwiches, too.

I used to buy gluten wheat flower at regular grocery stores. I think it was called bakers flour or something like that. Used to make my own bread, bagels, pretzels, and beer. (That sentence alone has 11 carbs in it.)

Bread flour is a high-gluten flour; I'm guessing that's what you bought. I can still find that in (some) regular grocery stores. However, an oft-requested ingredient in many bread recipes that call for non-white flours is gluten, which is sold by itself. It helps the loaves stick together when using "rougher" flours like whole-wheat, rye, etc.

I think what has happened over time is that low-carb diets killed off the demand for bread making supplies...

do you mean vital wheat gluten? to help with the whole wheat breads? i get mine from Whole Foods.

i add it to heavy wheat breads or other low gluten breads.

i also get a lot of my supplies from http://www.bakerscatalog.com

p.s.

the whole foods that i go to in west hollywood sells the Bob's Red Mill brand of vital wheat gluten and other types of flours as well. they carry the king arthur brand of different flours too.

Thanks--I'll check it out. Vital wheat gluten is exactly what I'm looking for.

p.s. I grew up 2 miles from Bob's Red Mill and never even knew it was there...
