You can find most ingredients you need in any large grocery. First get a copy of Emeril Lagasse's "Louisiana: Real and Rustic" (THEN you make a roux.) Make your own tasso, boudin, etc. These recipes are excellent, and Emeril provides a lot of asides on his discovery of them in Cajun country while he was still learning his trade at Commander's Palace. The chicken and andouille gumbo is fantastic - one of the few recipes I don't doctor at least a little bit. I have to saythe andouille from Bailey's (World Famous) Andouille in LaPlace is much better than that I've made, so I use theirs, but they don't ship. Bottom line - do it yourself and season to your taste! You'll be happier.

Walmart, Winn Dixie, just to name a couple of local grocery stores that sell Richard's.
