Update:

The Guinness modification turned out fantastic. The Mrs. had been severely rationing her intake due to her gastrointestinal distress caused by beans, but the latest batch caused her to disregard the expected distress and chow down anyway.

I have heard that the addition of 1/4 tsp. ground ginger helps to cut down the gas, this time I doubled that to 1/2 tsp. In the beginning versions of my recipe (which called for much less brown sugar, molasses, onions, mustard powder and bacon) the addition of the ginger was somewhat noticeable, but currently there was no appreciable change in flavor. I had a big plateful last night and have not noticed much gas. YMMV.

Folks sometimes inquire about Conte's in Rockland. Well, here is a photo from a friend who frequents Conte's...it's "Cioppino," haddock, scallops, lobster tail..."perfection," he says. And yes, the pan is the plate.
