Immersion chillers work incredibly fast and are very efficient. It's something to see the protiens coagulate before your eyes and form the trub in the bottom of your kettle. The problem is they really should be made of stainless steel which puts them out of the reach of most home brewers. We used heat exchangers for the pro brewing and recovered the heated water for the next day's brewing water.

I am trying to brew mead because it is so hard to find locally. Is anyone else interested in learning how to make mead at home?
