Does anyone know how much edible lobster meat can be retreived from a whole lobster after it has been steamed?

Depends on the size of the lobster, and if it has both claws.

8-9 ounces from a one pound (chix) hard shell and about 6-8 ounces from a shedder. I assume you know the difference between a hard shell lobster and a shedder. If not ask....I'll tell you.

Hee hee...I used to marvel at how much meat my grandmother could get out of a lobster. She'd completely dismantled it, and she picked every last fraction of an inch (to include the inside of the carapace).

I've yet since to see a person who could literally leave NOTHING and I mean NOTHING but the shell. I often told her she missed her calling as a surgeon.

Personally, I prefer hard-shells since I find that there's more meat and less water. Some people believe that soft-shells are sweeter.

Some people also put a dash of vinegar in the butter. It's good IMO, but I have to be in the mood for it.
