Rent prices change EVERY day? I can understand every month may due to specials, but prices being different every day? I have been to MANY MANY states and this is a first for me
I've only heard this line from big apartment complexes who tend to shift their prices based on percentage of occupancy, upcoming vacancies, and so forth. You won't likely find this when dealing with individual landlords.

That is odd though. They should still be able to give someone a quote for an apartment that isn't going to be something different by the next morning. I think I will be eliminating apartment places from my list that tell me their rent prices change daily and for that they cant give me a quote unless I am renting that very same day
It's got to be the complexes. A lot of them try to "negotiate" rates. It's almost like car sales (unfortunately). They want to see you in person so they can haggle with you and offer special rates for different units. Generally they try to get you into pricier units stating that it's "a better value." I think that it's simply a matter of them wanting to be in a position of power during negotiations. You should check for the prices online. They will most certainly have units, "on sale" that they need to see you in person to "discuss." that's where the prices are changing every day.
Are you speaking with apartment complexes or real estate agencies? Agencies have brokers who work with many various management companies and landlords and prices do vary because it depends on what apartments are currently available.
Apartment complexes shouldn't vary that much, but I do know that Avalon, for example, uses a computer program to figure out the rent. It's like kmann-sherborn described - the computer spits out a rent price depending on the various factors happening that day based on all their properties nationally, regionally, etc. The rental office may have the ability to offer specials and discounts, but they don't set the base price.

I've seen some of the bigger apartment complexes do this, but usually you can get an idea of price online...they should have a webpage and usually have the layouts you can look at. Overall, prices are ridiculous for some of these apartments and even the security deposit is quite a bit higher here than other parts of the country.
The thing I would look out for the most is the "specials" they offer at these larger apartment complexes. They will usually give you one or two months free and prorate your rent for this. At the end of your lease (usually at least a year), they jack the prices back up and you are forced to either pay this new higher rent or move somewhere else and maybe deal with the same thing again. They also charge about $100 or more if you want a garage space and will charge a pet fee. I've heard people say pet fees are illegal in MA, but they do it all the time.
