Well, it's just that it happens all the time. My theory is that the name "Eddie" does not exist in mexican spanish. Similar to the way that chinese people always say "actually" when they talk in english.

I guess Eddie is a diminutive of Edward, Eduardo in spanish. I know some people with that name and they are called Eddy even in Mexico, so I guess they confuse your pronunciation and that's why they call you Eric.

There's a song from the 50's by Angelica Maria called "Eddy, Eddy" just check on you tube:

Maybe they're mistaking the way you pronounce the 'dd' in Eddie for the rolled r in Spanish.

"Eddy" sounds pretty much like it would be spelled "Éri" in Spanish.

eddy is also used in Spanish as a diminutive for the name "Edgar", so its probably just because of the pronunciation in english

Deb100 makes a good point. When you say your name (Eddie), it comes out sounding somewhat the way a native Spanish speaker might pronounce Éric.
