The gastronomy of Mexico is so flavorful, spicy, colorful and aromatic it's definitely at the top of my list of favorite cuisines.
This past weekend my family prepared a wonderful distinctive Mexican dish called Birria along with gorditas de horno. I'd like to share some photos of these fabulous and laborious dishes.
Oven and hole at pre-heating stages.
Lamb meat with agave leaves and epazote for extra flavor.
Sealed with mud then Cooked for 3.5-4 hours
Gorditas de horno. So tasty and incredibly addictive.
Anything al Pastor. I'd eat a piece of wood if it was prepared al Pastor.
Mole' same thing. I love making it, but I end up getting every single pot, pan, and dish dirty at least once.
I'm a serious connoisseur of al pastor myself. I've been on trips to Mexico City where's spent hours trying to find the best taco stand for tacos al pastor in some neighborhood... Actually one of the best examples I had was in a small town on the Southeastern coast of the Yucatan--can't remember the name, but there was a taqueria in the middle of town which had a huge meat spit and pineapples hanging from the side. All they served was tacos al pastor.
A little thing that a local Mexican restaurant called Las Maracas prepares called "Chuy's Special". Shredded steak, shrimp, and queso all over a bed of fried rice.
