You could probably make a survey that included over a hundred choices, but found this interesting. It would be nice to see it broken down by region.

My guess is that throughout the country, pastor tacos have the preference.

In the north and occident Asada and Barbacoa comes on second place.

In central Mexico Suadero, Canasta and tripa in thar order.

And in from Bajio to Pacific Carnitas.

In the south I really don´t know, maybe not tacos but tlayudas and tamales.

In Yucatan Cochinita Pibil Tacos must be the winners.

In coast zones fish tacos are very popular.

Here in Jalisco you see more fondas offering birria as a guiso than other parts of Mexico.

My fiance would eat most of them - only one he wouldn't touch is tripa. I'm more partial to tamales.

There are a lot of taco variants my wife and I avoid or struggle with.

She doesn't like anything guts so tripas, buche, pancita, etc. are all out. I like 'em.
Neither one of us can do sesos because of it's just too far out there, I think you have to be raised eating it to be able to eat it.
Some that can cause texture issues like labio, cachete, oreja, or trompa one has to be in the mood for. To me they are best after a few beers, although if trompa has hairs in it that's a deal breaker.

Other organs aren't as common (at least around here) hígado, riñón, corazón, etc. are more common in soups and stuff than tacos.

I really thought asada or barbacoa would win this one. I mean, I know pastor is very popular, but still, I am a bit surprised.

I am not familiar with tacos de canasta. Is it just what we call tacos al vapor in Tijuana?

Anyone watch The Taco Chronicles on Netflix?

We've been watching it with a mission of after each episode we find one of the more well-regarded places in town that specializes in that type of taco. Usually that means a place that only has that type of taco, but obviously for something like canasta it wouldn't really be a thing.
