They might be able to get a one bedroom with a dining room or small den in Sabal Chase for $1000. Same goes for Country Walk or The Crossings area. OP: when you look at a map, the Sabal Chase area is the triangle bounded by Killian Parkway to the north, the Florida Turnpike to the west and SR 874 to the east.

If you don't mind a little bit of a drive to work, there are two bedroom townhomes/apartments in East Homestead (the "new" part of town east of the Turnpike) that rent for under $1000/month.

That's actually a good suggestion too, it wouldn't be much different than East Homestead in my opinion.
