Has there ever been a poll on our military
of how many Whites, Blacks, hispanics join our military.? I bet there is more whites / blacks who protect and stand up for our country then hispanics.

The Department of Defense as well as each branch of the U.S. Military knows how many of each ethnic group there is.

No disrespect back to you, but it seems you've already decided Hispanics are underrepresented in the way you phrased your question and following statement. You'd be wrong. They are slightly underrepresented, but not by any major amount.

Caucasian-65.5% of military accessions, population 18-24 eligibles (non-institutionalized) 64.8%
African-American-17.3% of military accessions, population 18-24 eligibles (non-institutionalized)14.3%
Hispanics-11.4% of military accessions, population 18-24 eligibles (non-institutionalized) 15.6%
Other-5.9% of military accessions population 18-24 eligibles (non-institutionalized) 5.3%
Source is table 2.5, but the whole report is full of facts like Hispanic representation is rising. So...where'd your question come from?
Here's an interesting fact, in terms of the overall population the US territories (Guam, American Samoa, the US Virgin Islands, Puerto Rico, and the Northern Mariana Islands) have more veterans per 1,000 residents then in any of the 50 states. American Indians (aka "Native Americans") also have a very high level of military service.
I suspect it's mostly due to the economic conditions rather then pride in the nation.

Why would you suspect that? Do you suppose citizens of the territories and Native American's are just a bunch of poor dummies who can't think of anything else to do, or that they're not "really" American's so they're unable to be motivated by the same things which motivate others to join?
But I really dont know that this topic is a military discussion either lol
