Look to what others like you are doing in your area and be a copy cat. What is doing good two counties away might not apply to you in your area. I suspect that buying a truck and trailer in the beginning might wreck any future profit for quite awhile. Hiring someone to do the hauling might be the best. No monthly payment, no insurance and no mainteance, No flat and ruined expensive tires to replace etc etc.
The specialty market in your area might be overloaded already.
Check out goats. They make money real quick.

They say you can start with 4 bred females and make profit the first year. Google for the Southern Mo goat growers association. Something like that! I have read that for meat goats they can sell all they produce. Schools out!

I believe that a lot of the demand for meat goats in SW MO comes from the large number of Hispanic people which live here to work in the factories and poultry plants. Several Mexican restaurants in Carthage have various goat dishes on the menu.

I didn't see any goat on the menu when we were in Japan in May, but they WERE all in Japanese! I'll have to ask my Japanese friend about it.

You can raise meat goats or show goats for sale to the 4Her's. Two different markets. Or raise both at the same time.
