As a long time fan of his books and films, I'd like to hear what some of your favorites are. I just finished watching The Stand after not seeing it since it came out as a TV series in 1994. I found it to be timeless and well directed with an amazing cast.
With so many good ones to choose from I don't know where to start, so I'll start with The Stand and the rest of you take it away.
(being a horror fan it was hard to not start it with Creepshow)

The original Kubrick, not the 1990s miniseries. I think it was absolutely brilliant.
But then, The Shining was more of a Kubrick film than a Stephen King film. Also, it had an absolutely stellar lineup, from director to cast -- something most of King's films have lacked. Put Nicholson on the screen and Kubrick behind the camera and even Children Of The Corn VI probably would've been decent.
The Shawshank Redemption was very entertaining, I thought. But I also thought it lacked substance, like a greasy, delicious cheesburger -- tasty, but a meal you'll soon forget, as opposed to one that will long linger fondly in your memory.
When you dig deep enough, you'll probably find that (made up statistic =p) like 90 percent of King's works have been made into a film. Whether they are a blockbuster or some straight to VHS piece of crap, it has most likely been made into a film by someone.

I'm a big King fan, have been since I was a kid and his name was attached to a movie with MY name on it!
I read all his books, love most, hate a few. I've watched all the movies (except Apt Pupil - tried, could not finish).
The movies are hit or miss, and rarely are they adapted well. But his short stories adapt into shorts VERY well. Like episodes of Tales from the Darkside (Word Processor of the Gods?), and the Creepshow movies. I think my favorite of those was "Something to tide you over" with Leslie Nielsen and Ted Danson, or the movie Cats Eye, with The Ledge starring Robert Hayes.
I'd put Shawshank Redemption first, Stand By Me second and The Shining third.
The Shining was a brilliant interpretation right up until Scatman took an axe to the gut. I remember my reaction when I first saw it: "Wha? They killed Dick Halloran? Now it's up to Olive Oyl to save the kid? And what's this hedge maze stuff? I want to see the topiary come to life!"
The problem with remaking The Shining is that Kubrick did such a phenomenal job for the first 80% of the movie it would be hard for anyone to do better. But I can't forgive him for the ending. It ruined the movie for me. And it wasn't really all that climactic. And with current CGI, that topiary coming to life could be realistic and scary.
I think it might be something to interest Christopher Nolan now that he's finished the Batman trilogy.
Also, Misery... the parts of the book where Annie tortured Sheldon were far more gruesome and terrifying than the movie. I remember having to put the book down for awhile at that part.
