Not to say that they would have been bad had someone else played the part. But just non-starring roles that made a good movie great.

De Niro as the Devil in Angel Heart

John Cazale in Deer Hunter

Charles Durning in Dog Day Afternoon

Gene Hackman in Unforgiven, also the young kid in that, I'll have to google for his name.... Jaimz Woolvett, and Richard Harris was great too.

How 'bout some others?

I always disliked "The Departed" but wahlbergs character was what made the movie bearable for me.

How about this great scene with two great actors from one of my all-time favorite movies? This is the only scene Walken had in True Romance, and Hopper had only one other. But alot of people, when they mention this movie, will right away start quoting lines form this scene. One of the best scenes in cimenatic history!

I totally agree with all of the ones that were listed so far, especially Harvey Keitel's role in Pulp Fiction. I think he reprised his "The Cleaner" role from the Point of No Return movie which was released a year or so earlier than Pulp Fiction.

A great supporting and sadly small role for Phil Murray in ZombieLand.

Some others I will vaguely name:
Guys playing Milton and Lumberg
Jackie Gleason in Smokey & the Bandit
Darth Vader in the original Star Wars
Jack Black in Hi Fidelity. I also liked him in Orange County and Anchorman (I think he is funnier in supporting roles).
Landlord lady in Kung Fu Hustle
Marty Feldman in Silent Movie and Young Frankenstein
The guy playing the retard in Something About Mary
Dustin Hoffman in Rainman
Leonardo DiCaprio in What's Eating Gilbert Grape
Joe Pesci in Good Fellas
Brad Pitt in Fight Club
Dax Shepard in Idiocracy
John C. McGinley in Wild Hogs
Yul Brynner in Westworld
Marlon Brando in Godfather
Michael Biehn in Aliens/Terminator
Val Kilmer in Tombstone
Last but not least R. Lee Ermey in Full Metal Jacket

I wouldn't consider a lot of the ones previously mentioned "small roles". Below are my examples of small roles that the entire movie pivoted around. Without the help of these folks, the movie would've been over pretty quick:

Tom Bower as Marvin in Die Hard 2: Die Harder
Joe Zaloom as Jerry Parks in Die Hard: With a Vengance

Some of these had only one scene, but those scenes have been especially memorable for me.
Kathleen Wilhoite in "Witchboard" ~ To this day, my family quotes her "Just a little psychic humor!" line.
Tucker Smith as Ice, leading the Jets in "Cool" in the parking garage, in in "West Side Story"

West Side Story- Cool - YouTube
Dejah Moore in "Paper Moon" ~ Surprisingly, she did only one other movie: "Drive-In".

Gene Wilder as The Fox and Bob Fosse as The Snake in "The Little Prince"
Suzanne Charney leading the "Rich Man's Frug" routine in "Sweet Charity"

Rich Man's Frug - Fosse - YouTube
Robin Williams' scenes are the ONLY thing I like about "Good Will Hunting".
Jeff Howard and Ellen O'Mara in "Up the Down Staircase"
Fisher Stevens in "The Brother from Another Planet"

The Brother from Another Planet - New York Subway (Sam the Bellhop trick) - YouTube
Julie Newmar and Jerry Lewis in "Li'l Abner"

A handful off top of my head:

Slim Pickens gets on my list twice (Dr. Strangelove, Blazing Saddles)
Richard Libertini also makes it twice (The In-Laws, All of Me)
John Turturro (Big Lebowski)
Billy Crystal (Princess Bride)
Bruno Kirby (The Freshman)
John Lovitz (League of Their Own)

And maybe the best of all: Peter Falk (Wings of Desire)
