Although I very much like John Williams' music -- and the soundtrack to "Jaws" was genius, imo -- I actually prefer Morricone's ("The Mission" and "Good, Bad, and Ugly" tied for my favorites.)
Also, what about John Barry? ("Dance with Wolves" and "Somewhere in Time", to name two).
And, of course, the late, great James Horner. Actually, the more I think about it, the more I could list!!
I second John Barry. Out of Africa is another great example. Quite a few of the James Bond movie themes, too.
I went to IMDB and looked at both for comparison. While Williams has more nominations and one more Oscar win than Barry, I have not purchased any of his sound tracks, while I have several purchases for Barry's work. Barry's music can stand alone, while I believe Williams' musical awards were on the strength of the movies. I often chill out to Barry's tracks, especially Dances with Wolves and Somewhere in time.

For his single best piece of music? Yeah, I can't argue with that. I'm not the world's biggest Superman fan, but hearing this, even I want to put on a cape and fly around the room and fight for Truth and Justice:
Seriously. Hearing that again, I have to ask: What the firetruck happened to good movie music? That one piece of music by Williams absolutely annihilates any entire score for a super hero movie that anyone else has done in the past 40 years.
For something a bit more somber and introspective, I really love this piece:
