Die Hard 2 (airport terrorists) and 3 (downtown multi-bombings) both had a really simple plot-hole that made each movies entire storyline worthless. The action was fun, dialog good, even some pretty good acting, but the plots were the real victims.

Premise: Bad guys take over the airports radios, and all the airplanes in the air can't contact anyone on the ground to find out where/when to land. Hole: there are dozens of airplanes at the terminals, and parked nearby. Each one has several radios that could be used.
Die Hard 3 (downtown multi-bombings)

Premise: Bad guys are actually robbing the fed of lots of bars of gold. Hole: gold is heavy. Really heavy. I mean REALLY REALLY heavy. A small bar is like 80 lbs.
To haul out a total of $(1995USD) 140 billion in gold would take nearly 4,150 trucks (based on the weight capacity of the type of truck used in the film), a far cry from the 14 shown.
Die Hard 1 was pretty believable. (Other than the Hollywood-ubiquitous "HVAC ducting is well enough supported to hold my weight ---NOT).
2 was okay, but it wasn't really distinguishable from every other 80s action movie. The first Die Hard tried to add a twist to the saturated genre by adding more interesting characters (the hero wasn't simply an invincible, bad guy-killing, personification of freedom/justice/America; the antagonists weren't soul-less, unlikable, personifications of evil). Vengeance was a return to interesting characterization, despite the implausibility.
I think those that prefer Die Hard 3 (With a Vengeance) like it because it has a revenge angle from the original with Hans Gruber's brother trying to avenge his death. It is rated higher than 2 on IMDB probably in part for that reason.
Though I prefer the original, McClane's acting in this one along with Jeremy Irons really makes it enjoyable. As it turns out we find that Samuel Jackson has a racial chip on his shoulder in real life, just like he portrays in the movie.
So the subplot of the revenge angle makes this one better than DH 2 for many of us.
