Rocky III (I think that's the right one, it's been awhile) where they show snippets of Rocky's title defenses and Clubber Lang's rise to prominence.

I liked the opening sequence in Jerry Maguire.

The plane scene in Superman Returns rocked but I guess that's not an opening sequence.

The carrier flight ops scenes that open "Top Gun" is probably my favorite opening scene. Even as a USAF maintainer, the Tomcat will still be one of my favorite aircraft...
