Hard for me to think of any specifically. I don't like high pitched voices in general--but for some reason they're more tolerable from a man (think Meat Loaf or Steve Perry) than from a woman.
I like Chris Isaak's voice, Alannah Myles' voice, Meredith Brooks' voice, Randy Travis' voice--and I'm sure there's more, but only those three came up off the top of my head.
I've seen an argument about whether Bruce Dickinson or Rob Halford had the better voice--and I can't call that one.
It's so hard to list every singer that makes us feel and moves us; many here have listed others that are on 'my list'. Thanks BlackZappa for naming a few of them - the Rev. Al Green and Marvin Gaye.

I agree that a vocalist's soul and emotion are more important than technical ability. (Especially considering the fact that I know so little about the technical side of singing.)
Mark Knopfler is gravelly, and I can barely describe Neil Young's voice, but I like both. However, I don't blame people who can't stand Young's quavery tenor.
For women, I enjoy Madeiline Peyroux as well as Feist. Feist has such expressive strength and sweetness.
Peyroux sounds like Billie Holiday and has her own Parisian chanteuse history.
She's done a lot of covers but now writes her own material. Her warmth and humor shine.
My ex would never go dancing, because he said he couldn't dance. We were at a wedding and this was the first song we ever danced to. She did have an amazing voice.
Some of my favorite voices are those of Roberta Flack, Carly Simon, Minnie Ripperton*, Janis Joplin, Patrice Rushen, Marvin Gaye, Bobby Womack, Al Green, Luther Vandross, Bill Withers, and though his name escapes me, I know his last name is Wilson, he sang with New Birth
* Minnie Ripperton is so amazing... just wanted to note that.
I've followed her career since her Rotary Connection days from the late 60's. Great voice indeed. Sad that she died so young.
Favorites of mine would be Marvin Gaye, Ella Fitzgerald, Judy Collins, Bobby Hatfield (Righteous Brothers), Patsy Cline, Enya, Josh Groban, Andrea Bocelli. There are SO many others, try to think up some later!
Elvis Presley once was asked who he liked. Without hesitation he replied "Roy Orbison. He's the best in the business."
Also giving a nod to Justin Hayward of the Moody Blues.
