I'm an avid fisherman and can't wait to get a line wet in NH.
Don't worry, I only fish for sport with artificial baits and every fish I catch is promptly released.
From what I gather on the NH DFG website is that all rivers and streams are closed to fishing from Oct 16th to Dec 31st. Is that correct?
For the ponds and lakes it SEEMS that you can fish year round except for certain times of the year you may not be allowed to fish within 500 feet of a river inlet or outlet dam.
I see many size & limit restriction on taking fish, but as I stated earlier I will not be taking any so I'm not too worried about that.
If you have any info that i should know about or advice please chime in.

It also looks like the Connectiut River is open to year round fishing south of North Cumberland, NH.
I'm just looking for places I'm allowed to fish year round as long as they're not iced over of course..
I haven't tried ice fishing before, but it doesn't sound too appealing to me.

That website also has information about invasive species that you should know about. Milfoil in particular has become a problem in northern New England lakes. You don't want to be trucking that or anything else around on your gear.

All of my equipment gets rinsed down after a trip to keep it clean and functioning properly, so no worries there.
