Are people who attend or have attended Shawnee or Seneca HS considered Pineys?

No, Shawnee has a lot of well off folks from what I know. I assume Seneca does too.

But the towns look to be in the Pinelands, or at least very very close to it.

A "Piney" is someone who lives in the Pine Barrens and does not leave them. Nobody attending Seneca or Shawnee is living in a shack in the woods. Or very few? Anyway--the answer to your question is no. Just living by the Barrens does not make you a Piney.
