They still exist. Some are better than others.
Coach House in Hackensack and North Bergen have one, it's pretty decent.
Heritage in Hackensack has one, but it's really small.
My wife and I were seated in a restaurant right next to the salad bar and we got to see lots of kids fingering some of the food items and not putting them on their plates. Even some of the adults picked thru items by hand. Yuck
We both refuse to use salad bars any longer.

Oh, salad bars are TOTALLY unhealthy. No question. And those Buffet places... I think the scariest is the SUSHI BUFFETS
No diners that Im aware of but Charlie Browns in Denville has a nice one, the Sizzler in Rockaway has a huge salad bar too but we havent been there in ages (literally).
I remember many moons ago the Macy's in Willowbrook Mall had a restaurant in it with a really good salad bar. I was a teen and my uncle who spoiled me used to take me there and I'd have a Pina Colada (no-booze) they were SOOOO Good. The salad bar, which was amazing. And a French Dip sandwich. They started just bringing it out when they saw us after some time! LOL. Good times, good times.
I didn't know you could have a diner in NJ without a salad bar- I thought it was a requirement....lol. Both the Galaxy Diner in Rahway and the REO Diner in Woodbridge have them, as does just about every other diner I think I've ever visited in NJ.
